Cauliflower Gratin Recipe
Cauliflower is a great winter vegetable, and what most of us don’t know is its full of vitamin C. Warding off the inevitable winter colds, this Cauliflower gratin is one of the most comforting and delicious dishes to indulge in.
I pulled a beauty up out of the garden and served the cauliflower gratin with my beautiful slow braised Angus beef and vegetable pies.

(Serves 4-6 as an accompaniment)
YOU WILL NEED:
1 medium size cauliflower cut into florets.
2 tablespoons of butter
2 tablespoons of flour
600ml milk
1 tablespoon of Dijon mustard
1 cup of sharp cheddar and Gruyere cheese or 50/50
Malden salt
Freshly grated pepper
½ cup breadcrumbs
METHOD
Pre heat the oven to 180 ºC
Steam the cauliflower for about 5 minutes until tender
Drain any liquid that has come from the cauliflower and arrange in a buttered casserole dish with the flowers pointing upwards
To make the sauce, melt the butter in a medium saucepan and add the flour and stir until the flour and butter combine. Its best to use a flat sided wooded spoon for this.
Cook for 2 minutes
Add the milk, ¼ cup at a time and continue stirring.
Stir in the mustard, salt, and pepper to taste and then ½ the cheese.
Mix the remaining cheese with he breadcrumbs and sprinkle over the cauliflower.
Bake uncovered for 15 minutes or until golden brow
